This week has been a rollercoaster. Billy has changed positions at work again which means our schedules changed again. I am getting up at o’dark thirty again for work and trying to get used to that and Kat is having a routine change again. But the plus side is it’s more satisfying for us in many ways. I will have more time at the homestead and Billy gets more time with Kat. I just have to increase my coffee intake which I don’t mind a bit.
Even our cat is confused by the time changes! But it will be a godsend this summer when I’m trying to keep the potted tomatoes alive and help my sister with her garden. It’ll be getting home, check the plants and chickens then pack up and head out there for a few hours and let her play with Kat while I play in the dirt.
Kat is cutting more teeth, kill me now. Which of course makes her not wanna eat unless it’s apples, carrots, and chicken nuggets. Occasionally we can get her to eat something else but it’s rare. Her first steps are recommending a nutritionist to help us find stuff she likes and get a routine for mealtimes set. Joy! Getting dinner ready for when Billy gets home for his dinner break may just get a little harder, I see a lot of slow cooker and multicooker meals in the near future.
Here is this weeks menu:
Today: It’s leftover night and I’m honestly not looking forward to it, the only thing that sounds good is some leftover chicken mac from Sunday. Or popcorn, fruit, and cheese.
Thursday: Chicken and stuffing in the crockpot
Friday: Simple Tuna Salad since I’ll be shopping and I can whip this up ahead of time.
Saturday: Smoked Sausage and Rice
Sunday: Baked Potatoes with all the fixings. Billy’s request.
Tuesday: Chicken Street Tacos. I found out after I had planned for this that the link no longer works but I’ll just wing it.
