What a week!
Little Kyler came home and the flurry of appointments that followed, of course, kept me and Kelsey busy all week and a new baby always brings stress and I have lovingly been her decompression when she needs to vent about how she misses the hospital. I get it and she loves that I listen, judgment-free. I will always listen, judgment-free.
Kat is slowly opening her food horizons! Last night I attempted chicken street tacos and she liked the chicken part at least which is surprising because she likes bland food, but hey its a step in the right direction. We also tried fresh oranges instead of canned and we had some watermelon this week. I just wish her protein and carb intake would go up. I’m starting to think I have a little vegetarian on my hands, now if only she liked beans more, or spinach. I’m thinking smoothies with hidden veg and protein may be in her future.
My water heater for the chickens has kinda failed me but I think it’s more user error. I gotta wait for a warmer day to add more tape and wrap with insulation and see if that helps. Maybe today I can get that done while Billy is home to keep the kiddo from freaking out if she wakes up and Mommy is out of view.
I made a dessert recipe for Friday, my grandma will say it’s not a dessert but I love it with cool whip. I got the last picture I needed for it last night and I’m gonna work on typing it up after I’m done typing this up. So if you like cranberries stay tuned!
I can’t believe next week is Christmas and Sunday is the Winter Solstice! We get to pick up Joey on the way to family Christmas and keep him until after the new year so I gotta think bigger dinners because he’s a growing boy and needs the calories. We love having him home and trying to cook healthy big meals is a challenge for me since most of the time it’s just me and Billy and occasionally Kat will try what we’re eating. So send your creative vibes my way haha!

Thursday: Savory Hamburger Casserole, this is out of a very old book that is no longer in print. I may share the recipes with our tweaks of course and cite the original.
Friday: Lemon Chicken in the Multicooker/Instapot
Saturday: New England Boiled Dinner
Sunday: Making a soup recipe again because I forgot to get a few pics and want to share it with you guys.
Monday: Vegetable Hobo Stew from a slow cooker book Billy got ages ago.
Tuesday, Christmas Eve: Pizza, I know it’s supposed to be taco but I have a lot to get done for Christmas the next day.
