What’s up Wednesday and Meal Plan

So this has been a busy week as always on the farmstead. The chickens have been laying quite well so I’m getting 3 eggs a day almost every day. The cucumber plants have gone bonanza, but sadly I think the 2 zucchini I got will be all I get. Looks like I get to make a trip to the market outside town so I can make zucchini relish. The cherry tomatoes are doing well, I’ve been using them in all sorts of dinners where I would normally have used canned tomatoes.

I’ve been making pickles like it’s my business thanks to the overzealous cucumber plants. I’m hoping the beefsteak tomatoes start turning red and producing more soon because I wanna can some salsa!

Kathleen’s vocabulary continues to grow, she’s been ‘reading’ books with us. Her favorites have been I Love You Through and Through and I Love You as Big as The World. The first she got as a gift from my grandmother for her first birthday and the second I bought her for being good at the store. Plus we have been practicing with flashcards for numbers, colors, shapes, fruits, vegetables, common items, and a few animals also some sight words. If only she would eat better.

We have a lot of plans in motion right now so we’ve been super busy but until the plans come to fruition I’m not ready to share them just yet.

Friday: Tuna Casserole

Saturday: Chili dogs using last weeks Chili

Sunday: Roasted chicken with homemade cornbread dressing

Monday: Salad Kit

Tuesday: Turkey and Black Bean Tacos
