You read that right, I was sent home Saturday due to my work’s health screening policy. I had some stomach issues so they deemed it necessary for me to stay home for 7 days per the policy. But that gives me plenty of time to work on the blog and some housework while sipping tea and eating a lot of toast. For safety’s sake, Billy was told to stay home as well as I may have gotten him sick with the same stomach bug.
Last week I was unable to work on our weekly post due to my internet company having server issues but they were working fine the next day. So I’ll include last week’s menu as well as I’ve done in the past.
My strawberry plants are ready for sale and I shared it on Facebook, I have ten plants (I found another in the bed hidden under some leaves) and so far one has flowers blooming and others have buds ready to pop open. So if you would like to purchase some get ahold of me on Facebook or comment below!
We got the new raised beds in and I can’t wait to plant! Sadly due to circumstances, I didn’t have the allotted time for starting the plants indoors so I’ll be direct seeding this year about a week after last frost (April 19th for us). Hopefully, I get good results this year. I’m also going to add another inground bed directly behind the raised beds for row crops like corn.
The raised beds actually accidentally made my beds bigger, a happy accident so I’ll be taking advantage of the extra square footage. Lots of tomatoes, cucumbers, and peppers. I also will be planting the seeds I got from The Burning Hearth Homestead and at the end of the season, I’ll send some seeds back to Joey to further his mission to help others.
I’m so ready to get my hands in the dirt! And Kathleen is old enough to start ‘helping’ mommy in the garden so we’ll be putting her Christmas gift from Aunt Julie to use so she can play while mommy weeds and harvests. And I’m so glad I started this journey when I did. Some people are having to learn all of this stuff in the midst of the pandemic and I’ll gladly share my knowledge.

Wednesday was leftovers
Thursday we were supposed to have red beans and rice but I forgot to thaw out the sausage and I honestly can’t remember what we had.
Friday I made tuna salad for sandwiches
Saturday we made chicken broccoli with rice (kind of like beef and broccoli) but it came out gross so I ended up eating a big bowl of seasoned rice.
Sunday we had ham with potato hashbrowns and green beans for our Easter dinner.
Monday I screwed up and forgot to check my pesto, it had molded so I tossed it and made pasta salad instead.
Tuesday was Santa Fe Burrito Bake from an old cookbook I found at a rummage sale.
This Week’s Menu
Today: Leftovers if we find anything worth zapping in the microwave or I may try my hand at making popcorn on the stovetop and some fruit and cheese.
Thursday: Ham pasta salad with ham from Sunday.
Friday: Spanish Omelet with Potatoes and Chorizo recipe here
Saturday: Tuna casserole a.k.a Macaroni and cheese with tuna and peas
Sunday: Spaghetti with either ground beef or homemade meatballs
Monday: Simple Salad
